Human has been eating, using oil for thousands of years. In the 20th century, oil processing technology developed rapidly. There are two types of oil processing methods: refining and modification.
Edible Oil Refining, also known as refinery, is a general term for a series of processes to remove impurities from crude oil, and refers to the process of removing impurities in oil. It studies the physical and chemical properties of oil and its companions, according to the quality requirements of refined oils and the property differences between oil and impurities, appropriate technological measures are taken to separate the oils and impurities, thereby improving the practical safety and storage stability of oil. Oil refining mainly includes degumming, deacidification, decolorization, deodorization, dewaxing and other processes.
Oil modification refers to a process of changing the natural form and performance of oil by proper process with refined oil as raw material. It studies some special properties of oil, and through changing the structure and composition of oil, it achieves the purpose of increasing the variety of oil, improving the nutrition and use performance of oil, and expanding the use of oil. Oil deep processing mainly includes oil fractionation, oil hydrogenation, oil transesterification, and oil modulation and so on.
Oil is an important substance that constitutes organism of various animals and plants, and participates in the life activities of organism. It is also one of the main substances stored in animals and plants. There are 5 aspects of its function in the human body:
Ⅰ It is an important high-energy heat source for the human body (Oil supplies more than twice as much calorie as protein or carbohydrate of the same mass);

However, crude oil produced by any method contains a variety of substances, which affect the quality and flavor of oil, and even make it inedible with toxicity. Moreover, the single oil generally has some deficiencies in some aspects, which is not conducive to its function. Therefore, it is of great significance to refine and modify crude oil.
Oil refining can take different methods according to the nature and quantity of impurities in crude oil, the use of refined oil and quality requirements. There are many methods of oil refining, which are usually divided into the following three categories according to the different process, equipment, auxiliary materials and operation process used in oil refining.
Mechanical method includes sedimentation, filtration, centrifugal separation, etc. It is mainly used to separate mechanical and some colloidal impurities suspended in oil.
Chemical method mainly includes acid refining, alkali refining, oxidation, esterification and so on. There are obvious chemical reactions when this method is used. Acid refining is the acid treatment to remove pigment and gelatinized impurities; alkali refining is the alkali treatment to remove free fatty acids in crude oil; oxidation is mainly used for decolorization; esterification method is not used much, mainly for adding glycerol to make free fatty acids in oil form triglyceride, which reduces the content of free fatty acids.
Physical and chemical method mainly includes hydration, adsorption, steam distillation, liquid-liquid extraction and so on. This method is used without obvious chemical reactions but is different from mechanical method. Hydration is mainly used to remove colloidal impurities such as phospholipids in crude oil; adsorption is mainly used for decolorization; steam distillation is mainly used to remove odorous substances and free fatty acids in crude oil; liquid-liquid extraction is suitable for deacidification of dark oil with high acid value and is a promising deacidification method.

Enzymatic degumming is the use of modern biological engineering technology in oil refining. The principle of enzymatic degumming is to use the biologically produced phospholipase PLC to selectively interact with phospholipid bonds in phospholipids, cut phospholipid bonds, and triglyceride in the phospholipid structure is converted into diglyceride, and the obtained diglyceride is dissolved in the oil, and finally remains in the oil, and the phospholipid bond after the cleavage is converted into a phospholipid salt into the aqueous phase, so that the comprehensive yield of the oil is improved.
Nanometer neutralization and degumming is also a newly developed oil processing technology. The mesoscopic environment of nanometer reaction is modulated by nanometer scale, which is embodied in the reaction medium, carrier interface, etc. Nanoreactors should generally be nanomaterials or materials with nanostructures. They provide a nanoscale space, limiting the reaction to the nanospace range. The product with special structures and properties can be obtained by controlling the size of the nanometer reactor, materials and other factors (separation of phospholipids from neutral oils).
The above methods are difficult to separate in practice and the actual refining process is often a combination of several methods. For example, alkali refining is a typical chemical method, but during alkali refining, soapstock generated by alkali and free fatty acids will adsorb pigments, mucus and proteins, so that they can be separated from oil with soapstock. Soapstock adsorption is a physical and chemical process. After adsorption of impurities, oil soap separation or centrifugal separation is a mechanical method. So alkaline refining is not only a chemical refining process, but also a process of physical chemical and mechanical refining.
There are mainly three methods of oil modification: oil fractionation, oil hydrogenation and transesterification. They are also the three main processes for producing food-specific oil. Oil hydrogenation is the hydrogenation or supersaturation of the double bonds of unsaturated fatty acids in triglyceride molecules under the action of catalysts, thereby improving the melting point of oil and increasing its antioxidant capacity. Transesterification is the change (rearrangement) of fatty acids in the position of triglycerides under the action of catalysts. Hydrogenation and transesterification are irreversible chemical changes in the fatty acid composition under the action of catalysts.
Fractionation is based on melting points differences of different fatty acid triglycerides in and oil, crystallization of high melting point components through cooling, and filtration or centrifugation to obtain components with different melting points. 

Fractionation is a completely reversible physical modification method based entirely on molecular thermodynamics. Hydrogenation, transesterification and fractionation have their advantages and disadvantages. The methods of oil modulation include blending, emulsifying, quenching kneading and homogenizing. According to the functional requirements of various oil products, several raw materials and other ingredients are proportionally blended and then processed in whole or in part by these methods. Canola belongs to the Brassicaceae plant, and it contains considerable content of glucosinolate. Due to the presence of glucosidase in plants, glucosinolates are hydrolyzed by the effects of glucosidase, and the hydrolysate contains sulfur compounds such as thiocyanate and isothiocyanate and nitrile. Among them, thiocyanate and isothiocyanate can prevent the absorption of iodine from the body's thyroid gland, which will cause the body's thyroid hypertrophy. Nitrile can inhibit the growth of animals and cause animal death. It also has certain effects on the human body and has strong toxicity. Even some glucosinolates will be cyclized under certain conditions to form oxazolidinethione due to their own structure, which is quite detrimental to human health. Most of these sulfides are volatile, so they can be eliminated by heating in production and life.
Canola oil contains 20% -50% erucic acid. The chemical formula of erucic acid is CH3 (CH) 7 = CH (CH) 11COOH, which is a kind of fatty acid. Studies shows that animal eating a considerable amount of erucic acid can cause a large amount of triglycerides to accumulate in the heart muscle of animals. The main component of triglycerides is erucic acid. Long-term infiltration of myocardial monocytes can cause myocardial fibrosis and even pericardial effusion. In addition, erucic acid can cause liver sclerosis, which adversely affects human health.
The following measures can be used to reduce or even eliminate the effects of erucic acid on the human body:
1. Limit the erucic acid content in edible oils by formulating relevant legal standards to reduce it to a level beneficial to the human body
2. Improve the conventional vegetable seed varieties and reduce the erucic acid content. This new variety has appeared on the market now;

3. Reduce the harm of erucic acid to human body by adding appropriate saturated fatty acids.
Cottonseed used to extract cottonseed oil contains a considerable amount of gossypol, and gossypol is toxic. The harmful effects of gossypol are mainly combined with the proteins and amino acids in cottonseed meal, reducing the effectiveness of proteins and amino acids, especially lysine; gossypol entering the intestine can stimulate the gastrointestinal mucosa and cause gastroenteritis;after entering the body, it damages the heart, liver, kidney, nerves and other tissues and organs; gossypol also binds to functional proteins in the body, making it inactive, and iron binding causes iron deficiency anemia;serious illness can also cause reproductive damage, which has severely harmed people's health.
In order to make cottonseed oil reach the standard that people can eat normally, the free gossypol content needs to be reduced. The general treatment method is as follows: after steam cooking, pressing the cottonseeds, it is necessary to perform alkali refining for the pressed oil. The alkali refining can reduce the gossypol content and make its content within the limit of the content standard set by China.
After repeated heating at edible oil, its nutritional value is already quite low, and under high temperature environment, the molecular structure inside the oil will be destroyed, and the fatty acids therein will undergo polymerization. It is extremely toxic and can reduce the metabolism rate of animals, damage liver function, and even cause cancer. With repeated high-temperature use, more and more polymers in edible fats will cause greater harm to the human body. Therefore, in daily life, repeated use of grease at high temperatures should be avoided to reduce the harm to human health caused by harmful substances.
When edible oil is stored in a high temperature environment, it will produce a series of biochemical reactions, such as the enzymatic hydrolysis process catalyzed by plant residues and enzymes produced by microorganisms; the other is the hydrolysis process of oil products under air, sunlight, water and other conditions. These reactions will lead to rancidity of the oil. After the rancidity of fats and oils, a severely deteriorated odor will be released, and at the same time, various internal nutrients will be destroyed, which greatly reduces the nutritional value of edible fats, and what's more,It will also cause a series of harmful oxidation products to the human body, endanger human health, and even cause diseases such as tumors.
In sorder to prevent the rancidity of fats and oils, the following points hould be noticed during production and storage:
1. Strictly implement the process flow, improve the process level, reducing the content of residues in finished oils and thus destroying the conditions under which oxidase are activated in oils and fats, this requirement is often solved by hydration;
2. Try to reduce the moisture in the fat as much as possible, at least 0.2% required by relevant national standards;
3. Usually grease should be placed in a dry, dark and low temperature environment, and it needs to be sealed;
4. Reduce the possibility of microbial pollution by cleaning up the production and storage environment;
5. Reduce the possibility of metal ion pollution during production and storage;
6. It is possible to delay the oxidation of fat and extend the storage time by adding an appropriate amount of antioxidant to the fat. Of course, it is also possible to use a nitrogen-filled fresh-keeping method to extend the storage time.

It needs to be dried and cooled to a temperature suitable for storage and moisture acceptable to customers. This process is completed after DC (Drying, Cooling) is cooled and dried.

Working process of DC cooling dryer 
The drying layer (hot air layer) is a fan that blows hot air into the material layer through the bottom inter-layer to remove the moisture from the meal. The hot air is heated to a certain temperature by a saturated steam heater. While removing the moisture of the meal, the temperature of the meal is also reduced to 50-60 ° C.
The dried meal enters the cooling layer (cold wind layer). In this layer, room temperature air is directly blown into the material layer by the fan without heating, and the temperature of the meal is reduced to a safe storage temperature below 40 ° C.
Operation and control requirements of DC cooling dryer
Turn on DC and auxiliary equipment 20minutes before DT discharge and use the hot air heater to slowly warm up. Adjust the hot air temperature when feeding to prevent the unqualified moisture of the starting material.
The drying / cooling rate is controlled by adjusting the air volume, the steam volume of the heater and the feeding speed. Ensure that the surface of the material layer is slightly disturbed, and avoid excessive and small air volume. If the air volume is too large, more meal will blow into the dust collector; if it is too small, the fine material will easily leak into the inter-layer.
The height of each material layer is 10-15%; the hot air temperature of the hot air heater is <130 ℃, the temperature of the dry layer is 70-50 ℃, the temperature of the cooling layer is 50-40 ℃, and the output temperature is <45 ℃; Adjust the DC material moisture based on the amount of soybean husk added and the moisture content of the packing material.
